Clean surface to prepare chicken

Step 1: Preheat oven to lowest setting. Ovens vary. Some can go as low as 170 degrees or less. If not, 200 is safe.
Step 2: Line a baking sheet with parchment paper or you can choose to lightly spray it with cooking spray.
Step 3: Thoroughly rinse chicken with cool water, pat dry with a paper towel.
Step 4: On your sanitized prep surface, trim off any fat. Next, slice your chicken into strips cutting with the grain. This helps keep them nice and chewy. Slice your strips anywhere between 1/4-inch to an 1/8-inch thick. Keep them as close to the same size as possible. This will help keep the cooking time the same for each piece.
Step 5: Place chicken on cookie sheet, don’t let them touch. Lightly brush chicken with olive oil.
Step 6: Bake for 2 hours or until jerky is nice and dry. There should be no moisture. Breaking one apart will tell you.
Step 7: Let them cool thoroughly on a wire cooling rack.

Step 9: Store in an air-tight container for up to 2 weeks.
